The original Potbelly’s opened in 1977 in Lincoln Park, Chicago and sold antiques.
Soon the founders decided to start cooking sandwiches in one of their antique Potbelly stoves to sell to friends and neighbors.
When they had a line out the door every day, they realized they had a gem on their hands and switched from selling antiques to sandwiches only.
In 1996 Bryant Keil fell in love with the quirky Potbelly sandwich shop and purchased it.
His vision was to expand the tiny sandwich shop across the country, which he has been very successful in doing.
Potbelly’s motto is Fresh, Fast and Friendly, which they strive to live by every day.
